The varieties — Castillo, Caturra, Colombia, and Typica — are hand-selected for their complexity: dried orange, berry, and chocolate notes that develop slowly in the cool mountain air.
After harvest, the cherries are fully washed and dried in solar dryers — a labor-intensive process that preserves clarity and brightness in the cup. None of this is fast. None of it is cheap. And all of it matters.
